Trail recommendations from Indy to Mississippi

I will be traveling from Indianapolis to Mississippi this summer for training. I decided it would be a great idea to turn this into a bike trip on the way down and the way back. Anyone have some recommended/ must ride trails they can suggest? (beginner/ intermediate level) I tagged quite a few near Nashville but was trying to narrow it down to the best and most worth my time!

I have found out specific highways I will be traveling. I am looking for any routes along:
1) I-70 west crossing from Indy to Illinois.
2) I-57 S toward Memphis crossing into Missiouri
3) I-55 S toward Memphis (passing through Arkansas and then passing into Tennessee)
4) Any trails near Memphis, TN or Southaven, Mississippi

There is an epic "near" I-70 and I-57 if you can take a side trip. It’s at Potosi, Missoui.

Another epic is 3 hours from Memphis in Mountain View, AR.
