I have been doing the mountain bike for one and a half years so be patient with me. I have a 2012 Trek 100 elite. I am going to upgrade the crank and cassete to the Shimano XTR race. I know the teeth on my Xt parts but I need to know where to measure the crank length. Or any suggestions would help.
I am not even sure which gear ratio I should use. -

Crank arm length is measured from the center of the pedal spindle to the center of the crank bolt.
The cassette splines will normally have the number of teeth stamped on them but you an always count the teeth on the small and large spline to figure what you have. Most have about 11 on the small spline and anywhere from 23 to 36 teeth on the large spline depending on what kind of terrain they were designed for. More teeth on the big spline will allow you to spin easier while climbing steep terrain. It’s a personal preference really.
