I have access to 50 – 100 acres of property which includes a river flood plain. I want to build a singletrack for practice. Can anyone recommend a book or two to help me get started?

Not really a book but getting close.
IMBA has a wealth of information look under the resources section.
Hope that gets you started.

I agree with what was said above… definitely check out my thread, and check out the IMBA website.
But, IMBA DOES have a book that apparently has a bunch of great information… I really need to buy a copy: http://www.imba.com/catalog/book-trail-solutions
