I will be in Tuscany for a week this summer, get there on a June 29, and looking for mountain biking suggestions. Have rode everything from flow trails in Switzerland, Sky Park in Lake Arrowhead, to chunky Sedona trails, with my local trails being the San Gabriel’s Mtns in SoCal. I did read the Cinque Terra article on Singletracks. Staying near the town of Looking for suggestions for intermediate to advanced riders.

Hotel Massa Vecchia looked promising to me, but our itinerary got too full and I never pulled the trigger. But their website shows a lot of info for both off-road and road biking.
