Ellijay is wall to wall good riding. Try Bear Creek. I’ve ridden it twice since moving back to Georgia in December and it is a great trail and if you take the path off the back side of the trail head by the info board, it is a good trail for new riders.

That’s my suggestion.

I hear Tanasi in Tennessee has some good novice level trails mixed in, but I’ve never been there.
