I have the same problem, Ive dumped so much cash on different styles. The best I have found was my old sony earphones (you know, the yellow sports series), but ones with the shaped band that goes over top of your head. When you wear a helmet it holds the earphones in real tight!!
Im not really sure what the deal is with presta, I think its a weight saving issue as standard schrader tubes are on the heavy side. Most down hillers and free riders use the schrader tubes because weight isnt as big an issue and the extra protection is worth while. You need a presta to schrader adapter to inflate a presta tube, you usually get one included when you buy a bicycle tire pump. keep in mind, the valve stem hole in some rims are smaller and will only accomodate the presta valve, (you’d have to drill out the hole to put a larger stem tube into it..)
Man, suspension, disk brakes, thier all good but I have to say Stans no tubes system. I swear God himself uses this stuff. I havent had 1 flat in 2 years since using it!!
I had just been riding a Specialized epic. Im 5’10" with a 32.5 inseam as well, I love the epic in the large frame, a little more of a racey lay out position, but lots of standover room. You would probably feel fairly comfortable on either size!!
