I had lots of cheap Walmart MTB and BMX bikes growing up.  I rode a few trails that are not actual parks with Walmart bikes before.  I am looking for a nice hard tail with features like hydro brakes and good forks.  I have around $800 to spend on a nice MTB to ride on actual MTB trails, does anyone know a good bike for me?? I am around 5′ 9

A few months ago I picked up a Diamondback Sync and so far I am very happy with it. Might be something for you to look at.

I don’t really know of any specific brands but I can give you some pointers on components from my experience with beginner hardtails.

You should be able to get hydraulic disc brakes for $800. As for a fork, I’d strongly recommend at least looking into an air fork over coil. This will bump the price up and I’m not sure if there are any HT’s on the market now with air suspension that fit your budget. If you can stretch your budget to make this happen it will be well worth it. I’ve found air forks to be vastly superior to coil forks and you’ll likely make this upgrade someday any way.

IMO what’s most important are the quality of the fork, quality of the wheels (do some research as they will really take a beating), and the quality of internal components like bearings (these are often overlooked because you can’t see them but they are important in the way the bike rolls).

I think Chain Reaction Cycles has some well spec’ed British built hardtails with air forks that come in around or below his budget.  However, the trouble with mail order bikes is that you don’t get the same level of LBS support if things don’t go right.   But if the OP is handy mechanically, then I’d go the Chain Reaction route.    I think Vitus builds some great bikes.

$800 will buy you a fine, quality hardtail.

Fortunately, Singletracks just published your initial research for you:
