Different sections of the park make for very different rides. The main area to the north of the reservoir has a lot of short trails that connect the various parking areas plus roads. The area to the south is filled with roots. And the roots have roots. To the west, across 85, there are more longer trails and increased difficulty.
The park in general is more geared toward kayaking, picnicking, swimming, and fishing. It is well worth the visit for any of these activities, but the mountain biking is secondary.
Hopkinton State Park is a wonderful park and should be experienced. However, with the Vietnam trails just a few short miles south on 85, I would go there first.
